This was something that drew me to Filterstorm on the iPad right away -- the ability to pick a color range to keep in color while everything else converts to black & white. Now that Filterstorm is on the iPhone, it's very possible to do the same thing with that as well. I'm really not so much into single-function apps anymore unless they're free or really really really good...
